Determinación de la calidad microbiológica de carne molida de res en centros de expendio de la ciudad de Guayaquil


Abstract:

A descriptive, transversal, non-experimental research was carried out in different places in the city of Guayaquil, to analyze, compare and verify the microbiological quality by means of cultures in the petrifilm box of the different ground beef from supermarkets and markets that are sold in the city of Guayaquil. The sampling of this study was directed and by convenience of which 12 samples were taken, these samples were processed in the laboratory of Agrocalidad during 24 hours. 5 samples from markets and 7 from supermarkets, the parameters established for comparison come from the standard NTE INEN 1346:2016 second revision of which describes the requirements that meat products must meet in total aerobic count, E. coli and Salmonella. Staphylococcus aureus and Listeria were also investigated, where it was obtained as a result that of the 5 samples from markets and 7 from supermarkets 100% did not comply with the provisions of the standard NTE INEN 1346:2016 second revision.
