Educational nutritional intervention strategy, from the Ecuadorian university to the community.


Abstract:

This paper propose a methodological guide for the development of an educational nutritional intervention strategy, designed by university professionals and aimed at adolescents from an Ecuadorian rural community, based on the qualitative paradigm of participatory action intervention research that responds to the principles of university social responsibility and community human improvement. The proposed instrument is based on the philosophical, pedagogical and sociological perspectives and can be a tool for changing dietary ways and lifestyles in populations and in vulnerable contexts.
