Entrepreneurship of a dehydrated fruit snack as a food alternative to introduce the market in southern Quito.
Abstract:
This entrepreneurship begins during a teaching-learning process where we share the guidelines of creating self-sustaining projects where the mixture of several dehydrated fruits is merged. When we combine them we obtain" HEALTHY", from there we make a healthy snack, according to the National Development Plan (National Secretariat of Planning and Development, 2018), the government promotes the change of economic and social development for Ecuador with the creation of entrepreneurship in the productive sector, so we have this innovative blend of dehydrated fruits. In Google Scholar consultations are held in the range from 2012 to 2017:" dehydrated fruits" 10 citations per year, with results with an average of 870 papers related to the subject, an H index of 8, in 102 different cities worldwide, in In conclusion, several alternatives have been proposed for the production of dehydrated fruit products and in the exclusive case of the combination with artificial candies, in this case the creation of a healthy snack based on dehydrated fruits is an innovative product. The properties and nutritional contribution of dehydrated fruits are generally recognized and valued by nutrition professionals and many times these particular characteristics of some fruits are unknown and due to their content and advantages or disadvantages they are widely used for fitness diets.
