Estudio comparativo de polifenoles totales y actividad antioxidante de la cáscara de chirimoya (annona cherimola mili) y guanábana (Annona muricata L)
Abstract:
The Annona cherimola Mill and Annona muricata L. They are fruits of the Anonaceae family that grow in subtropical climates and in the tropical areas of Ecuador, are trees of medium height between 5 and 9 meters. Ecuador produces a total of 1143 tons of custard apple and soursop about 5,000 tons per year. The pulp and seeds of custard apple and soursop have been studied but the shell does not, this represents (Annona cherimola Mill) its weight is 34.27% and for (Annona muricata L) 40%; Parts that are discarded as waste and can be used in novel and nutritious foods in terms of comparing the concentration of Total Polyphenols and Antioxidant Activity. Among the ethanol extracts from the shells of (Annona cherimola Mill) and (Annona muricata L). The methodology to be used was the Folin-Ciocalteau method for Total Polyphenols and DPPH for Antioxidant Activity, therefore the results of Total Polyphenols in custard apple peel were 0.96% and in soursop peel it was 0.43%, Antioxidant Activity in custard apple peel it was 52.41 mg / 100g and in soursop peel it was 258.52mg / 100g. In conclusion, the (Annona cherimola Mill) being the fruit whose peel had the best Antioxidant Activity.
