Estudio de factibilidad para la creación de una empresa de asesoramiento gastronómico – ambiental
Abstract:
In this degree project the intention was to create an advisory company, which would not only allow the improvement of quality of service in the industry of food and beverage, oriented to an adequate culinary management. Also, it would allow the industry to become the most responsible as possible with the environment. This would be made through the services of advisory, trainings and workshop programs provided by multidisciplinary professionals in the gastronomic and environmental fields, creating complete culinary experiences, full of ideas and resources that strengthen the link between gastronomy and environmental management. Environmental - gastronomy is a term that not only could be sold as a service, but arises as a concept for the future of the kitchen in terms of sustainability, creativity, responsibility, knowledge, development and innovation. To carry out this project a market research was performed in order to know the opinion about the offered services. These results were determined by a defined target market, and project a demand for the services. Also, a projection of the demand for the services was established. Moreover, this project presents an organizational – administrative analysis, in which resources, size and strategic business objectives were defined. Also a technical study of the business and its services was developed, in order to determine its characteristics, capacity and process flows. Finally, it ends with a financial study that determines the level of initial investment and fixed costs, based on the technical study. Using data collected in the market research, this project allows a projection of 5 years in terms of financial feasibility, as well as operations of the company. In addition at the end of the projection various financial indicators were analyzed, which rectified this statement.
