Estudio de la gastronomía ancestral en la parroquia de Machachi, cantón Mejía, provincia de Pichincha
Abstract:
A sinstitucional diagnosis was made for this research, in the Machachi parish where the 50% of the population is engaged in agricultural work specially the several Andean products cultivationand animal husbandry such as cattle while the other percentage is engaged in other different activities. The parish has natural areas from the Ecuadorian Andes which are valley and highlands (páramo). Machachi is surrounded by nine volcanic elevations that is why it is known as the nine volcanoes valley. Another significant thing about this is the “Chacarera” culture, whose main character is the “Chagra” representing the agricultural place highlighted. This research was conducted with different techniques that reveals different traditional and ancestral dishes that are in the parish; formerly they have been still on the ancestral cuisine dishes which are performed before the Spanish conquest with ingbkp_redients of that place. And thanks to different factors and key actors were able to obtain the expected result having six ancestral dishes.
