Estudio de la composición mineral y aminoácidos en el hongo ostra gris (Pleurotus ostreatus) en la provincia de Pichincha–Ecuador
Abstract:
Pleurotus ostreatus mushroom mineral and amino-acids composition was studied and the provided data showed that in Ecuador this mushroom has a great quality nutrients source. Among the genus of P. ostreatus mushrooms, it has been shown that they are easy to grow and have good profitability in their production, besides, for their ability to adapt to the environment. An important characteristic is that the use of different substrates, will modify the bromatology of the fungus. For this analysis, a fresh sample was collected in the province of Pichincha, from the Intiwasi farm. Its taxonomy and the micronutrients present in the mushroom were demonstrated, mainly showing a contribution of (calcium, potassium, sodium, iron, copper, manganese, zinc, magnesium) as well as the amino-acid profile (aspartic acid, glutamic acid, serine, histine, threonine, glycine, arginine, alanine, tyrosine, valine, methionine) carried out by validated analytical methodologies, finding important values for minerals, considering calcium in a higher proportion with 312.74 mg/Kg and the concentration of the 15 studied amino-acids with a total of 18.17 p/p, being able to stand out the nutritional richness that the gray oyster mushroom have turning it into a potential food source for Ecuadorian population.
