Evaluación de procedimientos y normas para procesamiento de camarón fresco congelado utilizados en empacadora de camarón
Abstract:
The objective that you outlines in this investigation is: To evaluate the procedures and the norms for the prosecution of the fresh and frozen shrimp that is used in a shrimp packer applying the form F01 of the National Plan of Control. For not being a traverse and descriptive experiment for the analyses of the results the statisticians (you mediate and percentages) of the descriptive statistic they were used. By means of these statisticians the interpretation of the results was obtained from the evaluation when applying the form F01 of the National Plan of Control. The total qualification of the parameters of the form F01 of the national plan of the control of the national institute of fishing was of the 92,85%, that is to say a CONFORMITY was obtained. The following conclusions were obtained: 1) the evaluation applying the Form F01 of the National Plan of the Control of the National Institute of Fishing in their relative contained sanitary general "Demands to the construction and materials"; and sanitary "specific Demands" carried out in the Plant of Prosecution in study gave a CONFORMITY as a result therefore achieving a qualification of 92,85% completing this way the requirements of the National Plan of Control. 2) carried out the final audit can conclude that the company in study has a qualification he/she has a qualification that corresponds to CONFORMITY.
