Evaluation of losses in the Salcedo-Cotopaxi-Ecuador ice cream value chain
Abstract:
The present work consisted of an exhaustive analysis of the losses in the value chain in the production of Salcedo's ice cream, province of Cotopaxi, for this reason, segmentation of data was carried out employing a survey carried out to the workers of the micro and small enterprises in the sector. A quantitative approach methodology was developed to achieve reliable data clearly and concisely. To support the analysis, multiple linear correlation models were developed, where the pbkp_redictions of product prices were identified, and it was concluded that the losses in the value chain in the production of ice cream correspond to 5.05% of the raw material.
