Implementation of DMAIC in the snacks' manufacturing process

Abstract:

This article shows t he implementation of DMAIC (define, measure, analyze, improve, and cont rol) in an Ecuadori an Snack company. The company manufactures veget able snacks for export ation. The first trimester of 202, the company receives between one and four complaint s from t heir clients per month because of the presence of crumb in t he snacks. The objective of this study is to reduce the percent age of crumb in the snacks to maximum 15 %. Following t he DMAIC method, which stands for Define, Measure, Analyze, Improve, and Control, we collect and analyze qualitative and quantitative process data to identify the root causes and defneanaction plan for reducing the crumb. We found 4 root causes and for each of them an improvement plan was developed considering the const raints of the company. After implementing t he improvement ideas, the presence of crumb in the snacks was effectively reduced.
