Mejora del Indicador de Presencia de Levadura Remanente en la Cerveza Brillante o Micro-Yeast para una Empresa Productora de Cerveza Local Empleando la Metodología DMAIC.
Abstract:
The main objective of this work was to improve the Micro-yeast indicator, which is one of the most important quality characteristic controlled in the Brewery where this thesis was implemented, and currently is not accomplished. In the first part of this thesis, it is found a brief about DMAIC methodology. In the phase of analysis and improvement, it was determined by ponderation the main causes of Micro-yeast non-fulfillment: filter failure (51%), yeast contamination of deaerated and carbonated water (31%), maturated beer with yeast content above 4 Mill/mL (10%) and BBT and mains cleaning (8%). Wort calcium content was measured to be in 36 ppm but after the correction it was stablished in 65 ppm as standard recommends. In the green beer transference process a synergistic effect between the dosage of 100 g silica gel / HL beer and musts from 65 ppm calcium was found, obtaining yeast counts as low as 2.5 Mill/mL in mature beer. It was found that the use of Uniprocess tanks cause pass of yeast in the filter -25 UFC/100 mL, was abolished its use and "Split" process was applied to all brands. It was found that above a filtration rate of 650 hL/h there is also yeast passing, with directly proportional linear relationship with increasing flow. Applying a design of experiments, it was determined that the factors "Mix of filtration earths in the pre-coating" and "Mix of body-feed" and significantly impact, furthermore. The filter productivity increased in 3000 hL/cycle and a reduction of filtration earths consumption was obtanined, generating net savings of USD 12000 annually. In CIP operations the use of phosphoric acid was replaced by peracetic acid for mains and BBT sanitation, correcting the failure microbiological conditions. Process capability eventually arrived at 1.49. The result in the Micro-yeast indicator for 2013 was 76% and the next year was 98.9%, meeting the target set at 98%.
