Presencia de parásitos en expendedores y hortalizas en los mercados públicos y factores asociados, Cuenca 2015
Abstract:
Parasitic diseases transmitted through foods are originated due to the intake of significant amounts of parasitic agents in foods which affect the consumer´s health. The objective was to determine the presence of parasites in vegetables and merchants from public markets and associating factors. A transversal analytical study was used as a methodology. The samples were 144 merchants of vegetables selected from four markets who were asked to provide a stool sample and to purchase a lettuce (Lactuca sativa) and parsley (Petroselinum crispum) under ethical regulations. All stool samples underwent a coproparasitary test, simplified concentration of formalin-ether and Ziehl-Neelsen cold if it was necessary. The vegetables remained 24 hours under distilled water. Thereafter, 8 ml from the distilled water were centrifuged and the sediment was observed through the microscope. The results revealed 44,4% of contamination by parasites in parsley and 38,9% in lettuce. The parasitism prevalence in merchants was 68,1%. 54,2% of merchants are homeowners. 56,6% of their houses are village type. They have access to basic services such as permanent drinking water, toilets inside the houses, sewerage, and elimination of garbage through municipal collecting litter trucks. The factor of obtaining water through water delivery trucks in the market showed statistical association RP: 1,20 IC 95% (1,97-1,50 without statistical significance. Collection of vegetables through cultivation RP: 0,63 IC 95% (0,41 – 0,97) and P: 0,009 show association and statistical significance. It is concluded that parasites are present in merchants and vegetables with determinant factors such as water and the process of obtaining food.
