Rice
Abstract:
Rice is one of the most consumed cereals, mainly eaten as milled rice. Various value-added rice products have been developed because of the unique nutritive properties of this grain. Bakery products have received special attention among the processed rice-based products that are being launched. Nowadays, wheat free foods are becoming increasingly attractive for those people concerned about their health or wanting to avoid wheat in their diet. This chapter gives a brief description of rice production and reviews the physicochemical characteristics of rice flours and their utilization in bakery products.
