Ruta de la Quiteñidad, memoria Social :Lugares Turísticos y Gastronomía del Distrito Metropolitano de Quito


Abstract:

This study analyzes the Ecuadorian cuisine and its relation to the Quito identity from a cultural standpoint. The study is based on the theory of alternative communication and manages to show how an Ecuadorian daily life is formed purely by their culture. It also seeks to promote communicationally the existing national gastronomy in downtown Quito, since this part of the city is the greatest place visited by foreign tourists traveling to Ecuador. To conduct this research a study of local culture and culinary representations containing our identity was carried out, and it has been based on the theoretical branch of alternative communication. Key points as traditions, identity and what is known as popular were studied, being these issues, which are fully immersed in our gastronomic identity. In addition, through a research of three stages, surveys made to the city's foreign visitors, surveys to residents and interviews with owners of typical restaurants of downtown Quito, information was obtained relevant to confirm the hypothesis and conclude on the product of gastronomic identity. The result of our investigation was reflected in a printed guide, in two versions, in Spanish and in English, called “SaboreaQutio” and "Taste Quito" and that through photographs and descriptions of memorable places of the city, recreates an accessible route and manages to provide Quito’s cultural culinary experience that every tourist wants to live.
