Análisis y simulación del proceso de deshidratado de frutas utilizando un prototipo deshidratador con energía solar


Abstract:

In the present research a theoretical and experimental study is presented regarding the mass and energy transfer applied to 3 mms thickness laminated fruits in the maturity conditions given by the regulations of the country according to the Alimentarius CODEX, through specific calculations such as monthly irradiation, generated heat applied, useful and generated heat applird, drying time, percentages of relative humidity (% RH) and drying rates, the most representative curves in dehydrated fruit are obtained and will be used for the evaluation of the prototype. In order to obtain the results of the variables such as temperature, speed, weight and time, it was necessary to increase the efficiency of the equipment by analyzing and redesigning it. The study of equipment adaptation was based on ANSYS 16.1 and Inventor 2016 and Autodesks AutoCAD 2016 programs, in order to obtain a drying temperature suitable for dehydration. The experimental data were compared with thin layer mathematical models shown in the bibliogrphy of the present paper resulting in the model that most closely resembles the conditions mentioned by Juntamay. It presents figures, tables, calculations and simulations that will help to achieve the purpose of presenting analysis and study in solar panels and in this way, to provide bases for their industrialization and therefore to contribute to the society.
