Aplicación de un proceso analítico jerárquico (AHP) para mejorar la gestión de inventarios en cadenas de abastecimientos


Abstract:

The purpose of this study is to optimize the profits of the “FK Meat Distributor”, due to the lack of stock of meat for fries, since these products are sold in high demand and good inventory control is not maintained. This problem arises from the fact that the person in charge of the premises does not foresee the variation that could arise in the sales process. Meat that is sold fresh, without the need to be frozen, will have a higher selling price than that which was frozen. This implies that the distributor has the need to implement an inventory system to be able to maintain proper control in the planning of the supply. And to fulfill the purpose of the study, a model is developed whose implementation includes the use of the multi-criteria AHP method, which allows us to choose the best supply option, in addition, the demand for 2020 products is simulated by Monte Carlo simulation with a distribution of Normal probability based on the volume of sales from 2017 to 2019. The results show that the profits of the carnage would increase considerably by 77% by the year 2020 because the quantity of supply and its frequency changed
