Sustainability and economic aspects of insect farming and consumption

Abstract:

Climate change is currently a problem for the world. The demand for beef, pork and chicken meat is growing daily due to the increased consumption of food obtained from animals, causing the emission of large amounts of greenhouse gases, aggravating the problem of climate change. Edible insects offer a sustainable and practical solution to the environmental issue originated by the consumption of animal origin protein. This chapter analyses the nutritional value of insects (which allows them to be recommended for a healthy diet), the low environmental impact that their breeding would generate, how edible insects can mitigate to a great extent the pollution caused by traditional food sources and finally, the main economic aspects related to their production in different markets around the world.
