Basic foods used by some populations in Venezuela.
Abstract:
Data for the study were taken from 6 diet surveys between 1951 and 1957, 4 of them previously reported (see Absts. 3394, Vol. 23; 3564, Vol. 24; 5551, Vol. 27 and 1108, Vol. 28), and 2 unpublished; 4 were in Caracas, 1 was in Santa Teresa del Tuy and 1 in Bailadores. A greater variety of foods was used in Caracas than in the other towns in the interior. The total number used was 121; about a quarter of these were used constantly by more than 75% of the families studied. The main basic foods used in Caracas and Santa Teresa del Tuy were rice, wheat bread, beef, white cheese, black beans, onions, white sugar and coffee. In Caracas, alimentary pastes, milk powder, potatoes and tomatoes were eaten by more than 75% of the families; in Santa Teresa del Tuy garlic, small bananas (cambures) and concentrated sugar cane juice (papelon) also were used. In Bailadores only rice, fresh cow's milk, onions, papelon and coffee were used by more than 75% of families. Intake of Fe was, on average, more than the requirement, of energy, protein and nicotinic acid almost 100%, of Ca and Cu more than 50 and of vitamins A and B 1; riboflavin and ascorbic acid from 40 to 50% of requirements.
