Characterization of sheep meat in hidalgo state, México


Abstract:

Sheep production is the most important livestock activity in Hidalgo State (México), represents the second national producer and it is the main provider of sheep meat to the Mexico City market. However, socioeconomic and technologic issues related to the value chain stakeholders are unknown. By this way, this study is aimed to know the characteristics of the sheep farmers and their own farms, in addition to other stakeholders and process of transformation and consumption of meat sheep. Three types of surveys were applied to 114 farmers, 56 meat processors and 421 consumers. The main results indicated that pastoralist systems farmers are the less developed, but with highest familiar labor. The main dish was barbacoa, which is often consumed for weekends and parties. The generated information could be used for development makers.
