A viability study for the production of biofilms and in silico pbkp_redictions of major compounds in kefir


Abstract:

The occurrence of biofilm formation from kefir grains (KG) was determined using white (WS) and brown (BS) sugar solutions as the culture media. KG biofilms formed were weighed to determine the growth rate after 20 days. The concentration of KG required for biofilm formation on both substrates was 20 g/L and the concentration of BS and WS for biofilm formation was 40 g/L and 20 g/L, respectively. Regarding the macro and microelements, the concentration of Fe+2 was 2.725 mg/Kg in BS and 1.570 mg/Kg in WS. The concentration of Ca2+ was higher in biofilms with WS (2.150 mg/kg) than that formed with BS (0.550 mg/kg).
