Content of saccharides in selected cultivars and products of yacon


Abstract:

The content and composition of saccharides are influenced by cultivar of yacon (Smallanthus sonchifolius (Poepp. & Endl.) H. Robinson). According to landrace the content of FOS ranges from 1.66 to 41.29 g/100 g of dry matter. In comparison with related species S. siegesbckius, yacon has higher content of saccharides. The products of yacon also have a high content of FOS, up to 38.21 g/100g. Today yacon is begun to cultivate in the Czech Republic and in the future it could be a favourite vegetable and raw material for product acquisition with a high content of FOS.
