Cuantificación de la acidez total en una bebida refrescante sabor a limón que se expende en la ciudad de Machala.


Abstract:

In the present work was performed the quantification of acidity of a refreshing drink (Vivant de Limón) that is marketed in the city of Machala but because of the little existing demand is only sold in My Comisariato located in Paseo Shopping, pH was determined, acidity and a sensory analysis was carried out, at different temperatures that were 15 ° - 20 ° - 25 ° and 30 ° C, in order to determine the analyzes, the INEN 389 and INEN 750 Standards were used, it was also verified if the refreshing drink is inside of the permissible limits according to the INEN 2304 Standard. With the help of the Origin.50 program, the graphs were obtained. The drink meets all the acidity and pH requirements established in the Standard. At the temperature of 15 ° C, it obtained 100% acceptance, at 20 ° C 80% acceptance and 20% rejection, 25 ° C 70% acceptance and 30% rejection at 30 ° C 40% acceptance and 60% rejection, according to these analyzes it could be noted that the drink from 25 ° C onwards the acidity increases producing a rejection of the consumer due to the increase of present acidity that can cause an undesirable gastric acidity.
