Dietary fatty acids intake and plasma lipoprotein profile in Valencia Polytechnic University Workers


Abstract:

Background: The present study examines individual fatty acids and cholesterol intake in Valencia Polytechnic University workers. Also was supplemented with lipid and lipoprotein blood measurements. Methods: This is a descriptive study conducted on a sample of 278 subjects (173 men and 105 women). The analysis of the dietary intake was made by the interview method (24 hour recall). In every subject lipoprotein and cholesterol in blood were measured after 12 hours fasting. Results: The analysis of lipid intake showed a cholesterol intake over 300 mg/dL for men, whereas only in 20-29 and 40-49 age range women a high level was detected. In relation to dietary fat quality, SFA intake was over 5% for everybody, PUFA intake was within recommended levels and MUFA were consumed over 15% on the specific fatty acid recommendations for Spanish population. The analysis of lipoprotein and cholesterol leveles in blood showed a tendency towards cholesterol increases with age both in men and women. Conclusion: Total fat intake was high in this group. 91% of the females and 74% of the males in the subgroup aged 50 years and older showed serum cholesterol levels above desirable limits (200 mg/dL).
