Abstract:
The sparkling fresh passionflower fruits such as passion fruit, taxo and granadilla, have distinctive flavors, from these fruits we make the traditional sweets. We want to industrialize the process, changing the traditional way of doing these sweets into a more technical way. According to studies, the market is prepared to develop a new product from the fruits mentioned. The research was based on a market survey to determine how many people, especially school children aged 9 to 14 years in the canton of Cayambe, would like to consume products already made from these fruits. Furthermore we obtained information about how to industrialize the production of the sweet sparkling processes, the production quantities, the capacity of machinery and the plant design to ensure food safety and to ensure the health of operators.
