Nutritional composition of prosopis juliflora seed gum
Abstract:
The aim of this work was to characterize the nutritional composition of P. juliflora seed gum. An analysis was realized proximal applying the methods described in the AOAC. The cationic composition was determined by atomic absorption. The investigated gum exhibits a high contained of dietetic fiber (78.76 %), digestible total nutrients (81.34 %) and under content of fat (0.55 %). The cationic composition of the ash of the gum revealed that calcium, potassium, sodium and iron are the majority components. On the other hand, cations aluminium, vanadium and cadmium were not detected. Prosopis juliflora seed gum presents nutritional properties, which suggests used as natural ingbkp_redient in the preparation of functional rich food in fiber and in essential nutrients.
