Propuesta para una guía gastronómica de platos típicos representativos de la Provincia del Azuay, utilizados en fiestas populares y religiosas


Abstract:

This research had as a objective: to develop a gastronomic guide of typical dishes used on popular and religious festivals in the province of Azuay. Make an inventory of the typical and more representative dishes of Azuay in its popular and religious festivals, with the purpose of provide and save the traditional knowledge in the development of qualitative research; this monographic was organized by locations, dates, restaurants inventories, and informal places of traditional food sale, as well as the characterization of the main traditional dishes prepared in the popular and religious parties that have relevancy in the areas, such as: sociocultural and religious, which allows to position the identity of the cantons: Girón, Santa Isabel, Paute, Guachapala, Gualaceo, Sigsig, Chordeleg and Cuenca. The results of this research will be used as a frame of reference, structured in a gastronomical guide organized by localities and commemorative dates, of the traditional Azuaya cuisine; information that may be used by professional chefs, students of the same gastronomic branch and citizenship in general
