Subproductos de cítricos como fuente de Fibra Dietaria


Abstract:

The main objective of the present research work was to quantify the total dietary fiber (TDF), insoluble dietary fiber (IDF) and soluble dietary fiber (SDF) in by-products of washed tangerine King variety (Citrus reticulate), using the AOAC 991.43 enzymatic-gravimetric method with the help of the Megazyme enzyme kit. The byproduct with highest dietary fiber was the albedo, with a value of 71.11 g/100g DB, with respect to the insoluble dietary fiber content, the highest value was registered in the albedo, with a value of 69.69 g/100g DB meanwhile pulp presented a high content of soluble dietary fiber, with a value if 6.97 g/100g DB. The IDF/FDS ratio occurred in the albedo was higher compared to the other analyzed fractions, being this value 49.95, meanwhile pulp showed a value less than 8.32. All byproducts are medium sources of total dietary fiber, with a high content of insoluble dietary fiber.
