Tratamiento enzimático del concentrado proteico de quinua (Chenopodium quinoa Willd.) con exo y endopeptidasas


Abstract:

Quinoa protein has high nutritional value, this positions it as a fundamental crop for human diet. The influence of enzymatic hydrolysis on the degree of hydrolysis (DH) and variation of soluble protein (VSP) was determined for a quinoa protein concentrate. Granozyme ACC®(endopeptidase) and Granozyme 1000® L (exopeptidase) were employed at different enzyme concentrations (0, 0.25 and 0.50%) and substrate content (2, 4 and 6%). The highest DH was reached for Granozyme 1000® L with 9.09%. The greatest VSP was reached at pH 7.5 and 55 C with 44.21% at 2% of substrate concentration. Finally, the DH was affected by the addition of proteases, while VSP was related to the process conditions.
