Aplicación de la metodología 5S en la línea número # 1 de clasificación y empaque de una empresa empacadora de camarón ubicada en Durán.
Abstract:
The principle of elaborating this essay was to apply a methodology that allows to improve and control parameters contemplated within the quality and innocuousness of the process line denominated in this essay as line # 1 which performs classification and shrimp packaging. The 5S methodology was carried out where five pillars are considered: selection, order, cleanliness, standardization and discipline. As research objectives, it focused on evaluating the current state of the plant, specifically the line # 1 versus the 5S methodology, establishing and validating an improvement plan with respect to food safety, followed by a measurement of the effectiveness of the 5S application through the unified technical standard ARCSA-067-2015-GGG. The problem found was the incorrect cleaning and sanitization of this line, having results of high microbiological analysis in the work environment, and NO conformities found in the internal audit of checklist 5S. In the evaluation of checklist 5S, the items with the lowest percentage of compliance were highlighted to improve them, making a correct POES (Standardized Operating Procedures for Sanitization) of equipment in contact with food in order to favor the fulfillment of another quality system such as the Good Manufacturing practices, in addition, there was evidence of a low load in aerobic from 12 CFU to 3 CFU, yeasts and molds from 10 CFU to 1 CFU from this line. As a recommendation, an improvement plan was created to preserve the quality of the line # 1 of classification and packaging, followed by preventive maintenance.
