Applicability of capillary electrophoresis to the study of bovine β-lactoglobulin polymorphism
Abstract:
Capillary electrophoresis performed on uncoated capillaries is used to quantitate major whey proteins in samples of raw bovine milk from the Fleckvieh, Holstein and Menorquina breeds. The influence of capillary conditioning between runs and of sample preparation steps on reproducibility and resolution are discussed. No interferences from immunoglobulin G and lactoferrin in the determination of β-lactoglobulin and α-lactalbumin are demonstrated. Study of the dependence of β-lactoglobulin and α-lactalbumin concentrations on β-lactoglobulin genotype shows no direct influence of this genotype on α-lactalbumin content, while the highest rate of biosynthesis of β-lactoglobulin is associated with allele A of this protein.
