Assessment of nutritional properties of sesame and flaxseed oil using quality indexes
Abstract:
The nutritional properties of sesame oil (Sesamum indicum L.) and flaxseed oil (Linum usitatissimum) were assessed using different quality indexes based on fatty acid composition. The refractive index, iodine and saponification values of the oils were also determined. Sesame oil contained saturated (SFA) lauric (14.6%) and palmitic (7.5%) acids, monounsaturated (MUFA) oleic acid (28.6%) and polyunsaturated (PUFA) linoleic acid (28.4%). Flaxseed oil contained 17.97% oleic acid, 12.25% linoleic and 39.90% alpha-linolenic acid (PUFA). Iodine and saponification values were within the normal range. Both oils are an excellent source of PUFA and exhibit cardioprotective properties. Sesame oil displays good oxidative stability owing to its high SFA content.
