Lipids of Kernels


Abstract:

Amaranth, buckwheat and quinoa are important pseudocereals that present higher oil content than other cereals such as barley, maize and wheat. These pseudocereals exhibit a profile rich in linoleic (omega-6), oleic, and linolenic (omega-3) acids, which reveals the quality of their lipids. Quinoa has a wider ratio of saturated/unsaturated acids and amaranth shows the major quantity of squalene than the other kernels. The consumption of polyunsaturated fatty acids could reduce the risk of heart disease.
